I don't know why, but I had this terrible urge for fried rice lately. I used to make it all the time years ago, but haven't done it in ages. Don't know why -- just never thought about it, I guess. I had a lot of "this and that" in the fridge, so decided I'd throw it all together to make my own. That's what's great about fried rice -- you can use all those little bits of left over veggies and meat that really aren't enough to serve as is. Once you get the hang of it, you'll be making it A LOT, I guarantee it! You just can't go wrong!
Ingredients
4 cups cooked rice (I cooked mine in chicken broth)
1 tablespoon butter or margarine
3 eggs, beaten
2 tablespoon butter or margarine (I used olive oil)
1/2 cup chopped onion
1/2 cup chopped green and/or red pepper (optional)
4 cups rice, prepared and cooled
1/2 cup shredded carrots (optional)
1/2 cup shredded lettus (optional)
1 cup cooked chicken (optional)
soy sauce
1 cup cooked peas (optional)
Directions
1 Melt 1 tablespoon butter in skillet or wok.
2 Scramble eggs in butter, breaking up the cooked eggs into small pieces.
3 Set aside.
4 Melt 1 tablespoon butter in skillet or wok.
5 Saute onions and/or green peppers in butter for 3 minutes.
6 Combine eggs, onions, rice, and meat, carrots, etc.
7 Stir in soy sauce until color of rice is uniform.
8 Stir in peas.
9 Toss and turn until everything is heated well.

Happy New Year Cora. Wishing you better health with full recovery. Whenever I am at a Chinese Restaurant I get Fried rice. But for New Years Eve it was Mexican food. Didn't party too much.

I've never ever made fried rice before; but LOVE it!
Lately, I've been overindulging in chocolate and fried food to the point I've gained about 15 pounds-
I've really been convicted about it, and this is the time for new beginnings.
When I got groceries I actually bought some brown rice for healthy versioned stir frys. I'll be remembering this post and reaching for the rice more often!

I have missed you so much, I get to blog and visit once more. My hubby blessed me with an early Birthday gift a new notebook laptop and it is just right for me to take along with me and even fit's in my purse lol. My computer crashed and I took time away and just spend quiet times with the Lord. How are you feeling?? You are always in my prayer and I smile when I say your name each morning as I drive to work and lift you up in prayer. I know the Lord will do great things just as he said in his word!!!

YUM - we use up leftovers this way a lot - DH loves rice more than potatoes so he is always delighted to see a plate of "whatever" placed before hime - good reminder because it is a wise way to use up our bits of this and that which might otherwise be wasted.

It is so hard to go through this but with the love of friends and family you will make it through.My journey with this started a year ago this month and I am now having radiation...12 more to go!

I printed off your recipe to Cora. We make Fried Rice but never added the peas and carrots. We make it with Cashew Chicken and Love that meal.
